Ippocrates Stamoulis was my father. Having been born on the island of Samos, in the Aegean Sea, his life was dominated by everything the beautiful waters had to offer.
Migrating to Australia in 1958, he worked in a mussel farm and processing plant in Williamstown. After a time of working with fresh produce, he decided to get behind the counter and cook fish and chips.
In 1969, with adequate knowledge of the Australian language, he took over the Blue Dolphin Fish Cafe in South Melbourne, which was later to become Clarendons Fish & Chippers. That was when Helen (my wife) and I decided in 1994 to follow my parents’ footsteps into the world of fish and chips.
But there was a twist; I wanted to do fish and chips my way by displaying the fish I had on offer to cook. My father thought I was crazy, saying nobody really wanted to see the fish they were eating.
Since establishing Clarendons, Mangrove Jacks, Hamptons Fish & Chippers, and the Red Mullet Fishcaf, I feel I changed the perception of traditional fast food with a new focus on flavour, health, and a diverse selection of premium quality seafood.
